I love Au Petit fer à Cheval (at the little horseshoe). 

Located in the Marais, this petite cafe-bar is an institution and will not be found in a tourist guide. The name refers to the marble-topped horseshoe-shaped bar in the front.

It is truly one of the most charming spots for a coffee, rosè, or pastis in Paris.
